Any flour available in the market is used to make chapatis. But, only pure flour should be used to make chapatis. If possible, you can buy wheat flour and prepare it super soft if you make chapatis. If not then get good branded wheat flour packets from the market. Make sure that the batter of the chapatis is soft. Don't forget to sift the flour if it is hard. Take enough flour to make chapatis. Add some oil, warm water and a little milk to this dough and mix it gently.

If the dough is hard, the chapatis will also be soft. Otherwise they will come hard. So mix the dough so that it becomes soft. Cover this dough with a wet cloth and keep it aside for about half an hour. This makes the chapatis soft. Take this dough and make it into small balls. Dry flour is sprinkled on the pita while making chapatis. This makes them hard. That's why you can make chapatis with oil instead of dry flour.

Make chapatis and fold it. Once again make it into a chapati and bake it. Then it swells well. And if you bake the chapatis immediately after making them, they will become super soft. If baked after drying, they remain dry. The pan for baking the chapatis should be hot. But cook on low flame. The higher the flame, the faster the batter will burn. This makes the chapatis firm. Use ghee to fry the chapatis. Finally after baking the chapatis keep them in a hot box.
